Those listeners who have visited a distillery that malts some of it’s own barley will be familiar with the scene: a large, concrete-floored room in which the wet barley grains are laid out as they start to germinate.

But as the barley begins it’s transformation from a humble grain into the water of life, there is much more to find out, more questions to be asked and more answers sought.
