Season 1, Episode 3 – Milling & Mashing

We’ve now reached the point in the production process where we can find ourselves in a distillery. The barley has been delivered and needs to be made ready for mashing.

Once the consignment of grain has been milled it is sent to the mash tun where the starch in the grain is transformed in to fermentable sugars.

How is the grain prepared for mashing? What happens in the mill? Why is hot water added to the grains? Why is it added twice? What is wort? How do the starches become sugars?
